It never fails, I just get through losing a few pounds when we decide to take an RV road trip when I, alas, gain them back while traveling!
I’ve started this Blog to help others learn how to eat on the road and cook in your RV in a light, easy and delicious way. No complicated recipes with ingredients you would never have room for in your small RV kitchen. Nothing with complicated steps that take time away from you enjoying your carefree RV lifestyle. Lighter dishes to take to potlucks so you’ll always know you’ll have something tasty and waist-friendly to enjoy around the campfire! Even the best choices to order at restaurants along the way! I’ll also suggest great gadget finds that are a must for every skinny RV kitchen.
Together we can eat our way across America and not gain one single pound!

By profession I’m an interior designer, having spent the last 30 years of my life helping people make comfortable, functional and beautiful spaces in their homes, and offices. When I started this post, I was determined to stay focused on Skinny RVing, since I am forever battling the last few pounds I have to lose!
